When one mentions the word “tequila” in a crowd there are usually a variety of reactions.   Often someone will state, “Oh no, I had a bad experience with tequila”.  Most likely that person had “an experience with bad tequila.”  Sadly many outside of Mexico were introduced to tequila by over indulging in an inferior cheap, “mixto” or gold tequila.   By law, mixto tequila only has to be 51% agave, the other 49% is often cheap sugar alcohol, which contributes to the hangover and headache.  Judging all tequila by the taste of mixto would be the equivalent to stating, “there are no fine restaurants in the United States”, after having only eaten fast food.

The best tequilas are 100% blue agave. Blanco tequila is the spirit first derived in the distillation process. In order to create Reposado (Rested) Tequila, the Blanco must be aged in oak barrels for a minimum of two months, under the strict supervision and authority of the CRT *. This resting process mellows the flavor of the Blanco tequila and contributes some of the character of the oak barrels. The longer it is aged in the barrels, the more flavor, color and aroma will be imprinted. Anejo tequila is aged a minimum of one year.

*(Consejo Regulado de Tequila). The CRT is the non-profit agency who is accredited by the Mexican government to oversee and certify that production, bottling and labeling of tequila is done according to the official Mexican standards.
